This year St. Patrick’s Day falls on a Tuesday, so here’s a sweet and tasty low-cal nod to the Irish that takes only two minutes—yup, you read that right—to prepare. Because let’s face it, few of us have time to cook on a school/worknight, no matter how much we like eating green treats.
“While your healthy food choices may go out the window sometimes,” says Robin Rood, Teladoc R.D., L.D., M.Ed., M.A., “there is a way to modify your favorite dishes.” This green “ice cream” recipe calls for only four simple, healthy ingredients, and it’s even vegan friendly. It has no added sugar, and you don’t have to borrow your neighbor’s fancy ice cream freezer; a standard blender will do. If you make it in small batches, like we’ve listed here (makes two servings), then a personal blender is really all you need. You can also add a couple drops of green food coloring to make this dessert look even more festive. Sláinte!
Matcha Green Tea Ice Cream
serves 2
Ingredients
- 2 ripe bananas, peeled and frozen solid
- ¼ cup vegan chocolate chips (or other favorite)
- 1 tablespoon matcha powder (add more or less to taste)
- 1 tablespoon vegan liquid (almond, rice, soy, or other vegan milk)
Directions
- Chop bananas into bite-sized pieces and place in a blender.
- Stir matcha powder into vegan liquid until well mixed. Add to blender.
- Blend until smooth and creamy. Add vegan chocolate chips (or other favorite flavorings like chopped fruit or nuts).
- Eat immediately as soft ice cream or place in a freezer-safe container and freeze until firm.
